Bocconcini (Indian cheese)

John’s Bocconcini is made of 100 per cent pure fresh water buffalo’s milk. The cheese is sold swimming in whey. It is floppy rather than rubbery and has moisture trapped between the layers of springy curd. It is a traditional, farmhouse and creamy stretched curd cheese. A little mouthful and cherry sized Italian cheese balls of 20g made with 100 per cent pure fresh buffalo’s milk. It is wet shiny and pure white like a pearl. Cow’s milk mozzarella is not as delicately flavoured as that from water buffalo’s milk. A fresh cheese should be eaten within a few days of being made.
